Oatmeal Craisin Cookies
Ingredients
- 1 ½ cups flour
- 1 teaspoon baking soda
- ½ teaspoon salt
- ½ teaspoon cinnamon
- 2 ½ cups old-fashioned oatmeal
- 1 cup margarine
- 1 cup light brown sugar
- ½ cup sugar
- 2 eggs
- 1 tablespoon honey
- 2 teaspoons vanilla
- 1 ⅓ cups craisins
Instructions
- Preheat oven to 350°F.
- In a large mixing bowl, combine flour, baking soda, salt, cinnamon, oatmeal, margarine, brown sugar, sugar, eggs, honey, and vanilla. Mix until everything is well blended.
- Stir in the craisins.
- Scoop and shape the dough into small balls and place them on an ungreased baking sheet, leaving space between each one.
- Bake for about 9 minutes, or until the cookies are lightly golden around the edges.
- Remove from the oven and let cool on the baking sheet for a few minutes before transferring to a wire rack.
Storage tips:
- Store cooled cookies in an airtight container at room temperature for up to 5 days.
- Freeze baked cookies in a freezer-safe bag for up to 3 months. Thaw at room temperature when ready to serve.
