We all know how hectic weeknights can get. Between work, family obligations, and personal errands, finding the time to cook a nutritious meal can feel like an impossible task.

Who says you can’t enjoy a gourmet meal on a weeknight? Beef stroganoff is a creamy, savory delight that you can make in one pot. Tender strips of beef, mushrooms, and onions meld together in a rich sauce made with sour cream and beef stock that’s perfect over egg noodles.

This dish is a guaranteed crowd-pleaser (even for picky eaters) and can be on your table in under 30 minutes.

Quinoa Black Bean Chili

If you’re looking for a vegetarian option, this quinoa and black bean chili is a must-try. Loaded with protein from the quinoa and beans, and bursting with flavors from tomatoes, bell peppers, and spices, this dish is as hearty as it is healthy.

It’s also incredibly versatile—serve it with a side of cornbread and a dollop of sour cream and scallions for that restaurant-quality look and taste.

Thai Green Curry with Tofu

If you’re in the mood for something different but delicious, Thai green curry is a fantastic choice. Curry is a phenomenal pick for one-pot dishes, and this one combines tofu with a variety of vegetables in a fragrant coconut milk-based curry sauce.

You can cheat slightly and pick up a green curry paste from your local grocery store. The blend of spicy, sweet, and savory flavors is incredible, especially for how quickly everything comes together.

Spinach and Mushroom Risotto

Risotto might be on the more complicated side for this list, but at least it’s all done in one pot! Combine Arborio rice with mushrooms, spinach, lots of freshly grated parmesan, thyme, and a splash of white wine for a creamy, rich meal that feels like a night out at the fanciest restaurant in town.

The constant stirring might seem tedious, but it’s a great way to unwind and eventually becomes somewhat meditative.

Chicken and Veggie Stew

This dish combines chicken and broth with an array of veggies, all seasoned with herbs and spices to your liking. Why is this meal such a good idea? First of all, it’s a complete, balanced dish in one pot—protein, veggies, and carbs all cooked together. Secondly, it’s easily customizable.

Don’t have chicken in the fridge? Swap it out for a different protein. Use whatever veggies you have on hand to make this the ultimate clean sweep of your fridge at the end of a busy week.

Sausage and Pepper Skillet

For a meal that’s both colorful and flavorful, a sausage and bell pepper skillet is the way to go. Sauté sausages with bell peppers, onions, and garlic, then let it all simmer together.

It’s an unassuming dish, but one that truly comes together with virtually no effort at all, and cleanup is a breeze. You can serve this as is or with a starch-like rice.
