Don’t Underestimate a Good Marinade

Flavor is king when it comes to grilling. Marinating your meats or seasoning them properly can elevate your BBQ game. A good marinade can tenderize the meat and infuse it with flavor. You can use store-bought marinades or create your own with ingredients like olive oil, vinegar, herbs, and spices. You can also brine your meat if you have the time and use a strong dry rub if you don’t—no matter how you slice it, you want to get flavor in there!

Know About Direct and Indirect Heat

Understanding the difference between direct and indirect heat is crucial for grilling different types of food. Direct heat is great for searing steaks, burgers, and hot dogs. It’s when the food is placed directly over the heat source. Indirect heat, on the other hand, is better for larger cuts of meat like ribs or whole chickens, which need to cook slowly and evenly. Knowing about heat zones can also help you cook more delicate ingredients, like vegetables, without worrying about scorching the outside.

Invest in a Meat Thermometer

You might be tempted to guesstimate your meat temps—that’s what a pro would do, right? Truthfully, many seasoned grill experts still use a meat thermometer to ensure they aren’t serving undercooked meat. It can be a point of pride to know when something is the perfect medium rare. But it’s much better (and safer) to serve things at the right temperature.

Don’t Overcrowd Your Grill

It might be tempting to throw everything on the grill at once, especially if you’re feeding a crowd. However, overcrowding the grill can lead to uneven cooking and make it difficult to manage
flare-ups. Give each piece of meat enough breathing room to cook properly. This also makes it easier to flip and move things around as needed.

Rest Your Meat

Patience is key when it comes to grilling. After you’ve taken your meat off the grill, let it rest for a few minutes before slicing into it. This allows the juices to redistribute throughout the meat, resulting in a more flavorful and juicy bite. Cutting into the meat too soon can cause all those delicious juices to run out, leaving you with dry meat, and you feeling frustrated that all your hard work has gone to waste!

Clean Your Grill

Remember to clean your grill between each use. It sounds simple, but too many people leave their grill as is after they’re done cooking. But a quick cleaning of your grill not only extends the life of your equipment but also ensures better-tasting food the next time you fire it up. Use a grill brush to scrape off any food particles and residue. For gas grills, you can turn the burners on high for a few minutes to burn off any remaining bits.
