I love using leftovers to meal prep for the next day or even to eat two days in a row.

Unfortunately, my kids don’t have the same love for leftovers as I do. That’s why these leftover baked chicken recipes are so great. I can make a baked chicken one night and then use the leftovers to make a whole new dish for lunch or dinner the next day.

And if you are cooking for only one person then you can make yourself baked chicken and not have to worry about wasting any leftovers!
