Zero-Waste Cooking

Nobody likes food waste, but fortunately, the zero-waste cooking initiatives are making it a thing of the past—if you have the time to spare. The idea is to use every part of an ingredient, from root to stem, and find creative ways to minimize waste.

Think carrot top pesto, banana peel bacon, and broccoli stem slaw. Not only does this approach reduce waste, but it also saves money and encourages culinary creativity.

If pickling everything was the trend of the past decade, then fermentation is here to say, “Hold my kombucha.” Fermentation, an age-old preservation method, is experiencing a renaissance in the culinary world.

Fermented foods are packed with unique flavors and boast numerous health benefits, including improved digestion and a boosted immune system. And with a few tools and ingredients, you can also make everything from sauerkraut to kimchi right at home.

This sounds like an oxymoron, but health-conscious comfort food is actually all the rage right now! Recipes like cauliflower mac and cheese or brownies made mostly from black beans are taking the world by storm.

And while sure, it’s never going to beat out the original, it certainly gets close enough and still manages to sneak veggies into your diet without being too obvious. Now you can have your chocolate mousse and eat it too—just with avocado instead.

This isn’t necessarily a new trend, but it’s also one that certainly isn’t going anywhere anytime soon. Many home cooks are taking it a step further with hyper-local sourcing.

Hyper-local sourcing emphasizes sourcing ingredients as close to home as possible, often from within the same community or even your own backyard. This movement supports local farmers, reduces carbon footprints, and ensures fresher, more flavorful ingredients.
