6 Vegetarian Dishes for Your Next Barbecue

It’s time to fire up the grill and enjoy delicious food with friends and family.

But if some of your friends are sighing, looking at their plate of coleslaw for the third time that summer, it’s time to bring in some more exciting plant-based options that still scream barbecue.

Here are six of our favorites that are sure to impress!

Grilled Portobello Mushroom Burgers

Portobello mushroom burgers instead of the traditional beef patty are popular for vegetarians. They have a meaty texture that’s hearty and satisfying, and they grill exceptionally well.

The secret is to ensure to cook them long enough that they dry out enough; mushrooms are full of water that will make a bun seriously soggy! Marinate your mushroom burgers in some balsamic, herbs, and any other seasonings you’d use for a burger or steak.

Grill them so they’re nice and charred, and serve them with veg-friendly options like fresh avocado.

Grilled Halloumi Cheese

If this is your first time hearing about halloumi, you’re in for a treat—and so are your guests! Halloumi is a firm Mediterranean cheese that doesn’t melt when you grill it: it just gets crisp and golden!

Slice your halloumi into thick planks, brush with olive oil, and grill on each side for two to three minutes. Serve it up as a side dish, keeping it simple with some lemon, herbs, flaky salt, and another drizzle of some finishing olive oil for something absolutely showstopping that requires almost no effort.

Fruit Skewers

Let’s take a quick break from the grill for a second and do something more refreshing. Skewering fresh fruit is a fantastic appetizer that’s easy to eat and fun for everyone!

Want to keep things on the grill? Skewer some hardier fruits like pineapple; they get deliciously caramelized and make a phenomenally healthy addition to a barbecue.

Sure, you could make this eggplant dip any ol’ time you like. But what if you grilled the eggplant first? Grilling your eggplant brings a smokiness that plays well with the other ingredients in this Mediterranean dip.

You can also grill eggplant and toss it in some chimichurri as a main or side dish option; either works great!

BBQ Tofu

A tofu steak doesn’t sound super appetizing by itself, but what if you could infuse the smokiness of the grill for a more unique take on this vegetarian staple? You shouldn’t bother with anything other than extra firm, and we’d also recommend marinating your tofu after pressing it.

Skewering it like you would the fruit is also a smart way to go about it. Then finish by smothering it in your favorite BBQ sauce!

Grilled Veggies Pasta Salad

Pasta salad is often an overdone dish at a barbecue. But grilling your veggies and tossing them with pasta, some Parmesan, lemon zest, garlic, and high-quality olive oil is a fast and delicious way to revisit this backyard classic.

We recommend grilling hearty veggies like asparagus or zucchini. And don’t forget about the flavorful alliums; grilled shallots are buttery and divine in a dish like this!
