Pre-shredded cheese might be convenient, but it’s coated in anti-caking agents that can make your mac and cheese grainy instead of smooth. Grate your own cheese for a fresher, creamier melt and a richer flavor. Block cheese also allows you to choose higher-quality varieties, making for a more decadent dish.
